
Ingredients:
- Happy Home Sheer Khurma Mix (1 packet)
Full-fat milk (1 liter) - Sugar (4-5 tablespoons, depending on sweetness)
- Ghee (2-3 tablespoons)
- Water (1 cup)
- Dates (10-12, chopped)
- Almonds (10-12, sliced)
- Pistachios (10-12, chopped)
- Cashews (10-12, chopped)
- Raisins (2 tablespoons)
- Cardamom powder (1/2 teaspoon)
- Saffron strands (optional)
Instructions:
1. Preparation:
- Slice the almonds, pistachios, and cashews.
- Chop the dates into small pieces.
- Soak the saffron in a little warm milk if using.
2. Roasting the Dry Fruits:
- In a pan, heat 1 tablespoon of ghee on medium heat.
- Add the sliced almonds, pistachios, cashews, and raisins. Sauté until they are lightly roasted. Keep them aside.
3. Cooking the Vermicelli:
- In the same pan, add another tablespoon of ghee.
- Add the vermicelli from the Happy Home Sheer Khurma Mix. Roast it lightly until it turns golden brown. Stir occasionally to prevent burning.
4. Adding Milk:
- In a separate large saucepan, bring the milk to a boil.
- Once the milk starts boiling, lower the heat and add the roasted vermicelli from the Happy Home mix.
- Stir continuously to ensure the vermicelli cooks evenly.
5. Adding the Sheer Khurma Mix:
- Add the Happy Home Sheer Khurma Mix to the boiling milk and vermicelli. Stir well to ensure the mix dissolves completely.
- Let it simmer on low heat for 5-7 minutes. The vermicelli should soften and the mixture should thicken slightly.
6. Adding Sweeteners:
- Add sugar to the milk mixture and stir until it dissolves completely. You can adjust the sweetness based on your preference.
7. Adding Dates and Flavorings:
- Add the chopped dates to the mixture and stir well.
- Add the cardamom powder for flavor.
- If using, add the soaked saffron and its milk to the pot.
8. Simmering:
- Allow the sheer khurma to simmer for another 10 minutes on low heat. Keep stirring occasionally to prevent the mixture from sticking to the bottom.
9. Final Touch:
- Once the mixture thickens to your desired consistency, add the roasted dry fruits (almonds, cashews, raisins, pistachios) to the sheer khurma.
- Stir well to incorporate all the dry fruits.
Serve:
Your Sheer Khurma is now ready to serve! You can serve it warm or chilled, depending on your preference.
